Stillmaker & Sons are pioneering a new dimension in Australian Whisky and as a result are making exceptional Single Malt Whisky.
We are the only whisky maker in our unique climate and there were no existing rules for making whisky in Montville, Australia - where the cold south westerly winds and the summer ocean breezes meet the rolling green hills.
We realised that reversing the rules of cask maturation long established in other Australian whisky making regions was going to be a big leap of faith, but then so was the notion that Australian Single Malt Whisky could one day be named the best in the world!
To take advantage of Montville’s climatic conditions we open the distillery doors to cold dry winter winds from the south west and refreshing cool summer breezes blowing off the Coral Sea, adding elements to the maturation process that have not been repeated in Australian whisky.
Early tastings are very impressive and we keenly await the day we can share our first-of-its-kind Whisky with you.
