Our grandfather, Valentino, is remembered for his grit, humility, and gratitude. He was an ordinary man who exemplified that nothing worthwhile comes easily and that success requires hard work, courage, and perseverance. Those of us fortunate enough to have known him, spent time with him and listened to his stories, have been enriched by the experience. As guardians of his legacy, it is our responsibility to ensure that his memory remains alive. We are proud to honour him with our Single Malt Whisky, as a tribute to his enduring spirit.
Valentino’s legacy isn’t only woven into our family’s fabric but has also become part of everyone who learns his story through this whisky.
The casks in this collection are part of another family legacy. In 1877, 50 years before The Stillmaker arrived in Australia, Samuel McWilliam planted his first vines in New South Wales. This marked the beginning of the McWilliam’s family legacy as an Australian iconic winery.
Our Legacy Collection of Single Malt Whisky has been aged for over six years in French Oak casks that originally matured McWilliam’s Dry Apera. It has all the delicious aromas and flavours iconic to Apera maturation, with a silky mouthfeel and long warm spiced finish.
This collection embodies our bold choice to pioneer whisky-making in the unchartered terroir of Montville, contributing to a new chapter in the legacy of the finest Australian Single Malt Whisky makers.
Tasting Notes
Nose: orange zest, caramel, warm toffee, dried bananas, marzipan
Palate: liquorice, Zuppa Inglese, Christmas cake, rich brown sugar, Crepe Suzette, dark chocolate, stewed apples, hazelnut butter
Finish: lingering hints of malt, stewed dried fruit, spice & wisps of oak
